I have decided to blog a few of my favourite recipes.

These white chocolate, macadamia nut, cranberry and cinnamon scones are a delicious breakfast/brunch treat. Perfect for valentines day if you cut them out into heart shapes.

White Chocolate, Cranberry, Macadamia Nut & Cinnamon Scones - makes 12

set oven @ 180C

250g self raising flour

1.5 tsp baking powder

110g slightly soft unsalted butter cut up into chunks

50g granulated sugar

75g cranberries

75g macadamia nuts(can also use hazelnuts) or leave out completely

1 lge egg beaten

1 Tbs cream or milk + more to glaze

110g good white chocolate cut into 1/3 inch chunks

Sprinkle of demarara sugar to glaze

Place flour, baking powder, butter, cinnamon and salt into magimix and pulse to mix. Pulse in sugar, beaten egg and enough of the cream/milk to bind. Lastly add white chocolate, cranberries and nuts briefly pulsing to icorporate into the mix. Don't overmix or it will turn pink from the cranberries and you'll lose the chunks. Turn out onto floured suface and using floured hands (mix will be wet & sticky) shape into a flattened ball. Wrap in cling film and place in freezer for 15 mins or fridge for 30 mins. Roll the dough out on a floured surface with a floured rolling pin to a thickness of about an inch. Stamp out with a heart shaped or round cutter to whatever size you like. Brush with cream and sprinkle with demarara sugar to glaze then place on a baking tray lined with baking paper ( allow enough room as they spread a little while cooking). Bake in preheated oven 180C for 15 mins before turning the temperature down to 160C and baking for a further 5-10 mins until lightly browned. Serve warm straight from the oven - well not exactly, but you know what I mean...sounds good!

We have just made 1600 Granola Energy Bars for the Pedal Norfolk event at Holkham Hall. They were distributed to the cyclists at the feed stations throughout the weekend. I had the most wonderful comments from so many of the participants and have therefore decided to add them to my Granola range.

Once I've sorted out the packaging, they will be available on line and hopefully through many of our stockists.

We will soon be selling our new Toasted Seed and Nut Granola Bars. These are wonderfully wholesome in taste with only a hint of sweetness. I am totally addicted to them and have literally eaten nothing else during our production days in the new bakery. Coming soon!

After years in the kitchen we have out-grown our oven space and have moved into a new bakery. The new equipment is fantastic. We be able to produce much more granola each week, which will be a releif as we hated letting people down over the last part of 2015. Also, the new ovens have tighter controls, meaning we can start thinking about some new ingrediants and other ideas. Exciting!
